Easy 4th of July Favorites in Texas
There is always something going on during the 4th of July.
This year it falls on Saturday so there will be a lot of people celebrating, even in the Texas heat.
I have put together some of our favorite finger foods that are easy to make.
Grilled Chicken Wings and Eckrich Sausage
These are a staple on our grill anytime of the year.
For the wings, we marinate them in Frank’s RedHot Buffalo Wings sauce in a Ziplock bag until the grill is ready.

For the Eckrich Sausage, we cut the links in half and slice each one down the middle but don’t cut it all the way through.

Put the chicken and the sausage on the grill and cook until they are the way you want them to be.
About 15 minutes before you take them off the grill, slather BBQ sauce on the sausage.
Before you serve the sausage, cut them to bite size and add a toothpick for ease of use.
And done.
In The Bag Frito Pie
Uniquely Texas, Frito Pie is easy to make with little cost.

Select your favorite chili (can or homemade) and heat it up.
Cut open the top of single serve Frito bags, ladle in the chili and top with grated cheese.
For extras, add sour cream, chopped chives/onions, hot sauce and/or jalapenos.

Add a spoon or fork and enjoy.
Sirloin Wrapped Jalapeno Poppers
This is a new recipe for us, so I am including the recipe as it was written.



Easy Deviled Eggs
These are very easy to make and are always a crowd pleaser.

Boil 6 eggs (or more), peel off the shell and cut each egg in half.
Scoop out the yolks and put in a bowl.
Add 1/2 cup mayo, 1 tsp of Dijon mustard, 1 tsp dill pickle juice, and salt and pepper to taste.
Stir all ingredients together and put mixture back into the split eggs and top with paprika.
You can adjust the ingredients to your liking and they are ready to eat.
Grilled Corn on the Cob
These are simple to make and taste delicious.

Cut foil squares to allow the corn to be wrapped completely.
Use regular corn and slice them or use the smaller corn on the cob.
Put the cobs on the foil.
Add butter (spray or whatever you like), and salt and pepper for taste.
Wrap each foil tightly, grill, and enjoy.
Use the corn on the cob holders to add some extra fun.

Blueberry Cheesecake
This cheesecake is an easy, no bake, 5-ingredient recipe that I love.
Stir together: 8 oz cream cheese, softened and a small can of eagle brand sweetened condensed milk (14 ounce) until fluffy.
Add 1 tsp vanilla and 1/3 cup of lemon juice.

Pour mixture into a graham cracker crust and put in the fridge to set.
Put a can of blueberry (or your favorite flavor) filling in the fridge to chill.
Before serving, pour pie filling on top of the cheesecake.
Slice and let your taste buds enjoy.
Kool-Aid Pie
Whisk 1 (14 oz) can of sweetened condensed milk and 1 (.13-ounce) package unsweetened fruit-flavored drink mix (like Kool-Aid) together in a bowl until thoroughly combined and thick.
Gently fold in whipped topping (8 oz) until light and fluffy.
Pour filling into pie crust and refrigerate at least 1 hour before serving.

When I make this pie, I add strawberries (you could use any fruit) to the mixture before pouring in the pie crust.
This is a light dessert that is great during the Texas heat.
