Comfort from the Grill: Simple, Satisfying, and Smoky

Hey y’all.

Sometimes my husband and I get hungry for comfort food instead of heating up the house in the hot Texas weather, we cook it on the grill.

Start with a 3-4 pound chuck roast (it is just my husband and I) and pat your favorite roast seasoning on all sides.

While my husband sears the roast on the grill, I cut up potatoes, carrots and onions, and sprinkle additional seasoning on them.

We place the seared roast in our cast iron pot and add the veggies, a little more seasoning and pour about 1/4 cup of beef broth over the top.

Cook at 350 degrees for about 2 hours with the lid on. Take the lid off and turn on your smoke setting for that flavor.

Turn the grill down to 225 degrees and simmer until the roast and veggies are tender.

Once done, I pull the roast into bite-sized pieces, mix it well, and enjoy!
